Trish Deseine’s Banana & Date Chocolate Chip Ice-Cream

I don’t know about you, but when I need sweet things, I need them fast. Here are a couple of quick-fix recipes to replace the Haagen-Dazs and Hob Nobs, and which are easy to do with the children.

Banana and date choc chip ice-cream

Bananas aren’t just for banana bread, they also make the most wonderful, creamy ice cream – without cream! The date syrup adds smoothness and flavour, but you could use sugar or honey if you prefer. I’m lucky to have a good ice cream maker, but if you don’t, pour the mix into a plastic tub and beat the ice cream regularly as it freezes to eliminate ice crystals. It will take much longer – up to two hours depending on your freezer. (Perhaps it’s time to treat yourself and invest in a new piece of kitchen kit as summer looms? My ice-cream maker is probably the best professional equipment investment I’ve made.)

For 3
20 minutes preparation

3 or 4 ripe bananas, mashed
Juice of a lime or lemon
3 tablespoons date syrup, sugar or honey
50g finely chopped dark chocolate

Put the bananas, syrup and juice into the ice cream maker and churn until light and frozen. Add the chocolate as the ice cream firms up.

Peanut butter choc chip cookies

These cookies are done in 20 minutes, start to finish. It is the law that half the batch must be devoured as soon as they leave the oven, while the middles are fudgy and the chocolate is still soft.

5 minutes preparation
10 minutes cooking

200g peanut butter
150g light brown sugar
1 egg
50g chocolate chips, chunks or chopped chocolate

Heat the oven to 180C.

Mix the peanut butter, sugar and egg together to make a smooth paste. Form small balls then press them down with the back of a fork to make a criss cross pattern.

Bake for 7 to 8 minutes until the edges become slightly browned. Remove from the oven and leave to cool and harden – don’t try to move them! – for 5 minutes before setting them on a pastry rack to cool completely.
