The “Poetry and Places” afternoon tea launches on March 10 and is served in the Marker Bar & Lounge and on the terrace, weather permitting. It is inspired by some of Ireland’s most famous poets and writers as well as the flavours of iconic destinations including the Ring of Kerry, Achill Island, Valentia Island, Kilkenny Castle and Newgrange. For example, Seamus Heaney’s poem, Blackberry Picking inspired the blackberry tart, while Lilac by contemporary poet Martina Dalton was the starting point for the violet macaroon, with Berriolette curd and dried flowers. In addition to these symbolic sweet and savoury treats the menu also features a range of botanic and fragrant Ronnefeldt tea infusions, with champagne an optional extra.
