Check Out The New Scandi-Style Café At George’s Quay In Dublin

The latest addition to Ireland’s thriving coffee scene …

Volumes is the latest offering to arrive in Dublin as a space crafted around design, food, coffee and community. Created by a trio of experts – Mark Cashen of As One coffee shop, Paddy Kirk and Fionn Dwyer Hyland – they all bring a specialised skill to make it our favourite new spot.

Mark has grown and built As One on City Quay since 2019 with a focus on Irish farmers and growers, Fionn gained his experience through his time at Bastible and Lord’s in New York, while both Paddy and Fionn worked with Mark in As One.

Volumes’ mission is invite a slower and more communal way of enjoying coffee than endless queues and faceless baristas. They did their research by visiting coffee shops and bakeries in Copenhagen, New York, London, Madrid and Berlin to gain inspiration to create a cultural hub for coffee connoisseurs. Dublin-based Interior Design Studio 21 Spaces helped the team to realise their their vision, with many items featured from Copenhagen-based design studio FRAMA.

Expect expertly made coffee, bagels, pastries and sandwiches on house-made rolls with every element made in-house daily in an open style kitchen and bakery. Irish producers and suppliers include Hayes Farm in Co Tipperary, Goatsbridge Trout in Co Kilkenny and Connolly Meats in Co Monaghan, with more to follow. @volumesdublin
