We all have our favourite, comforting, buttery, crumble recipe, and boy do we need those right now. Here’s a little experiment I did with a non-dairy version which might help keep the peace in your mixed-eater household, or just give you an extra excuse to bake.
For 4
20 minutes prep
40 minutes cooking
350g plain flour
150 ml olive oil
2 tablespoons coconut sugar
1 tablespoon Demerara sugar
1/2 teaspoon salt
5 nice cooking apples, peeled, cored, chopped
3 – 4 cloves
1 tablespoon coconut sugar
Heat the oven to 170C.
Put the apples into a gratin or pie dish with the cloves and a little sugar if you wish.
Put the flour into a large bowl then drizzle the oil over it. Work the oil into the flour very lightly, using the tips of your fingers, until you obtain an irregular crumble mixture.
Stir through the salt and sugar and top the apples with the crumble. Bake for 40 minutes or so until the apples are bubbling at the edges and the crumble is golden and crisp.
