Belfast-bound road trippers (or dwellers) should make time to stop off at Oui Poutine on Donegall Quay in the city centre. Owner Kyllah Dittmar, a Canadian native was determined to fill the poutine-shaped gap in the Belfast culinary scene and so she embarked on a venture, establishing her very own food truck. When the pizza craving hits, it can be overwhelming, so should this happen while you are traversing the thoroughbred country of Co Kildare, Original Food Junkie is where you want to be. Pizza maestro Luke Denvir keeps things nice and simple here, with one option only and that is pizza. Combinations include pepperoni with confit roasted garlic, baby spinach, chilli and oregano or mushroom with black truffle oil, red onion, basil, baby spinach and toasted seeds, along with the usual suspects. The Hungry Veggie, Cliffs of Moher, Liscannor, Co Clare

Tom O’Regan and his vegetarian food truck are back at Guerin’s Path at The Cliffs of Moher for the summer season serving up a selection of homemade veggie burgers, fries and salads in a spectacular setting. As with most of the food trucks, hours will vary so do check in advance if you are gung ho for couscous fritters or the popular grilled halloumi and pineapple burger. The Real Fry Guys, Shanagarry, Co Cork

Shanagarry may be best known for the behemoth that is Ballymaloe House and Cookery School but it is also home to The Fry Guys, who are renowned for their selection of seafood with the Ballycotton lobster rolls sounding just what the doctor ordered on a summer’s day. Also on my wish list is the prawn scampi, the spiced pea and potato samosa with tamarind chutney, and of course, the wild garlic and parmesan fries. The location (and menu) can vary so best to just follow the queues. @realfryguys

She is the queen of no makeup makeup and even manages to make a smokey eye look subtle. When everyone else was going for heavy contour and laminated eyebrows, she continued to promote enhancing your natural features with simple tricks and smart product placement. If you have seen any of her videos, you will notice how little product she actually uses. Even Victoria Beckham commented how surprised she was when she went to remove her makeup after a shoot with Lisa on how little product was applied.
