The InterContinental, Dublin 4

Dublin’s Intercontinental Hotel is an oasis and the stunning Garden Terrace is Dublin’s best kept outdoor dining secret. The stunningly verdant gardens extend to two acres and wrap around the equally mesmerising patio where an array of dishes can be enjoyed under the sun. Burgers, crayfish rolls, steaks and risotto makes the menu an easy sell. And to drink? Why Champagne of course. www.intercontinental.com ; @intercondublin.

Asador, Dublin 4

On Haddington Road in Dublin 4, Asador is something of a dark horse. Alas, I’m a sucker for anything cooked over fire and the menu is a barbecue enthusiasts dream, without the charcoal perfume. All of the meats and seafood are cooked over fires of oak, apple and hickory woods and to be honest, the menu choices are slightly overwhelming. Should it be the halibut steak with Basque peppers, the 12oz Delmonico steak or the fire roasted chicken? l’Gueuleton, Dublin 2

On Dublin’s fade Street, the terrace at l’Gueuleton provides the ideal city centre pew for advanced people watching. The French style red and white striped awning will keep you dry should it rain, and freckle free should the sun be gracing us with its presence. Plus, a menu that includes pan fried hake with shaved fennel, lemon and sauce vierge is a must visit over summer in my book. Sage, Middleton

I have been quietly stalking Sage in Middleton for some time now and safe to say, rain or shine, a visit is on the cards. The prices appear fair, the reviews are solid and the menu is seasonal and interesting. Deane’s at Queens, Belfast

Belfast restaurant impresario, Michael Deane’s Deane’s at Queens is the perfect spot on a sunny day with its modern European cuisine and a cosy terrace overlooking Methodist College where Jamie Dornan (of Belfast and Fifty Shades fame) went to school. I would start with a dark and stormy and finish with chocolate truffle, raspberry ruffle, hazelnut and sorbet.
