A little touch of acidity brought by lemon juice or cider vinegar will make your summer drinks even more refreshing. Just add, ahem, sun? You could also replace the soda with bubbles.
15 minutes preparation
2 hours cooling
300g watermelon, plus a few chunks for decoration
1 tablespoon honey
1 ½ teaspoons good apple cider vinegar
1 apple, peeled, cut into chunks
400ml club soda
Thyme leaves and ice to garnish
Blitz the watermelon in a mixer then strain the purée to extract the juice.
Whisk in the honey and vinegar and chill well for a couple of hours. To serve, pour the juice into tall glasses, add ice, thyme, apple and watermelon chunks, pour in the soda water and stir with a long spoon before serving.
