I’m diving into vegan food at the moment and finding it extremely hard to bake without butter. I’m not yet happy with my attempts at pastry, although the crumb of my cupcakes is coming on leaps and bounds. As I was playing around with various icings and frostings, I made up a vegan recipe for these little chocolate peanut truffles. They are so good, despite (more like because of) the addition of evil vegan (!) Oreos. Make them! I won’t tell anyone, I promise.
Vegan Chocolate Oreo Peanut Butter Truffles
For 20 truffles
10 minutes preparation
1 hour chilling
4 tablespoons icing sugar
4 tablespoons good cocoa powder + 1 or 2 for rolling
2 heaped tablespoons peanut butter
4 or 5 Oreos, crushed
Put the icing sugar, cocoa powder and peanut butter in the bowl of your mixer and beat to form a smooth paste. Add a little warm water if it’s too thick.
Tip in the crushed Oreos and mix well. Take a teaspoon and roll into a small ball between the palms of your hands, then roll in the cocoa powder. Repeat until you’ve used all the mixture. Chill for an hour or so.
