Lignum, recently awarded a Michelin star, works particularly well for a get-together that requires intimacy rather than spectacle: a winter birthday, a quiet reunion, or any meal where the surroundings should anchor the mood rather than dominate it.

ON THE PLATE The kitchen revolves around wood fire and hot embers. Meats and fish are treated with patience; vegetables take on gentle sweetness from the fire. The execution is polished, the plates beautifully presented. There’s a clarity of flavour that keeps the food balanced and light – no small feat for a restaurant that lives by the flames.

DISFRUTAR, BARCELONA, SPAIN

THE DRAW Disfrutar’s calm, plantfilled dining room offers a contemporary counterpoint to the exuberance of the busy Barcelona streets outside. It’s a serene space, all soft curves and terracotta tones, modern but warm, designed to focus attention on the food, and relaxed enough that the kitchen’s inventiveness never feels like a stunt show.

ON THE PLATE The word inventive is often overused, but here it’s justified. Dishes are playful, technically immaculate, and occasionally audacious, yet flavours remain clear and grounded. There’s joy, certainly, but also restraint – a sense that the kitchen takes everything seriously but also wants you to enjoy yourself rather than marvel at how smart and creative the dishes are. It’s a balancing act few restaurants manage, and Disfrutar makes it look effortless. 

MAISON BRAS, LAGUIOLE, FRANCE

THE DRAW You don’t end up at Maison Bras by accident. Perched on the wide, windswept Aubrac plateau, the restaurant feels like the endpoint of a pilgrimage, and quite often it is. The building’s sleek lines and wide windows mirror that sense of openness. It’s a setting that encourages reflection – ideal for anniversaries, milestone celebrations or any time you feel you might benefit from a little distance from everyday life.

ON THE PLATE The food remains resolutely of its place, with herbs gathered from nearby meadows, vegetables handled with care, and the famed Gargouillou, one of the greatest expressions of seasonality. A classic dish of potatoes and ham indigenous to Aubrac, Gargouillou was reinvented by chef Michel Bras as a celebration of gardenfresh vegetables. His version is a salad containing 60 species of vegetables, seeds, and flowers that vary depending on season. A restorative dish if ever there was one.

THE DRAW Half-sunk beneath the surface of the icy waters of the North Sea, Under is one of the world’s most arresting dining rooms, a stark, concrete monolith. The atmosphere inside is almost contemplative, shaped by the shifting light and marine life visible through the panoramic window. It’s a natural choice for occasions that deserve something special, without sacrificing style over substance.

ON THE PLATE The tasting menu is shaped by the surrounding waters. Scallops, cod, seaweed, and shellfish appear in various forms, from clean broths to precisely handled raw preparations. Flavours are pared back but resonant, mirroring the stark beauty of the coastline. The result is a meal that feels completely at ease with its setting, rather than competing against it.

DE KAS, AMSTERDAM, NETHERLANDS

THE DRAW Set inside a 1920s greenhouse on the edge of Amsterdam’s Park Frankendael, De Kas has long championed the idea that a meal can be both restorative and quietly celebratory. The space, all glass and lofty ceilings, allows soft northern light to filter through the window panes, and the room’s long, clean lines give it the air of a modern conservatory rather than a restaurant.

ON THE PLATE “Harvested in the morning, on your plate in the afternoon” is the motto at De Kas. Flavours are crisp, green, and direct, with an emphasis on texture and natural sweetness: fresh leaves, delicate broths, herbs used with purpose rather than flourish. There is a quiet discipline to the progression of dishes, each one minimalist but thoughtfully assembled.
