Green Goddess for St Patrick’s Day
A nod to the day that’s in it and a reminder of this vibrant, healthy, goes-with-everything sauce. Try it with a simple green salad, on grilled vegetables, fish or chicken, or mixed with houmous for extra flavour.
For 4
5 minutes preparation
1 tablespoon each of chives, flat leaf parsley, tarragon and lemon juice
2 or 3 anchovy filets
1 garlic clove
100g mayonnaise
250ml buttermilk
Pepper to taste
Put all the ingredients in a mixer and blitz until smooth. Drizzle over salad, fish etc, or spoon into houmous and mix through.
