The Lobby
THE VIBE: A captivating mix of restored Palladian splendour and modern luxury means it’s all rather fabulous.
THE BACKSTORY: The Palace has lived many lives since it was built in 1732 by architect Edward Lovett Pearce for Archbishop Theophilus Bolton. Now it’s owned by thoroughbred champion breeders the Magniers of Coolmore Stud fame, who have transformed and extended the facilities to meet the highest sustainability standards.
A Garden Wing Suite
STYLE: Grand but not intimidating. Interior designer Emma Pearson worked with Susan Magnier on the decor which combines Turkish rugs, antique furniture, statement artworks, comfy sofas and equine touches.
THE ROOMS: 42 charming bedrooms and suites in four categories. My suite, in the Garden Wing, was romantic, airy and understated. It opened onto the historic landscaped gardens (including two mulberry trees planted in 1702) and the Bishop’s Walk with private access to the Rock of Cashel. I loved the soothing colour palette, natural fabrics, Melitta pour-over coffee machine and Memo Paris Irish Leather toiletries.
The Residents’ Bar
DINING: Befitting a Relais & Châteaux hotel, dining is exquisite, overseen by chef Stephen Hayes. Breakfast is in the Queen Anne Room, also the setting for afternoon tea, against a backdrop of equine art, maroon banquettes and views of the Rock. Dinner in the Michelin-starred Bishop’s Buttery is a highlight.
DON’T: Miss a nightcap in the Residents Cocktail Bar or Guinness Bar – Richard Guinness brewed ale for the archbishop; his son, Arthur, later set up the brewery in Dublin.
The indoor-outdoor pool in the spa
DO: Make time to use the pretty spa, especially the heated indoor-outdoor pool and interesting hot and cold experience showers.
THE OFFER: The Solo Sojourn offer caters to this growing demographic – an indulgent overnight retreat in a King Room at single occupancy rates, €369, with breakfast and dinner in the snug at Mikey Ryan’s or a Taste of Tipperary platter in your room. (I opted for supper in Mikey Ryan’s and enjoyed the buzz in this bistro which aces upscale comfort food). Optional add-ons include a seaweed bath, Rossa Pottery masterclass, and a private Reiki or meditation session. You’ll be spoiled with a gift, discounts on Bamford and Valmont products in the spa and plenty of glossies.
VERDICT: Cocooning doesn’t get much better than this utterly bewitching experience you will want to repeat. www.cashelpalacehotel.ie.
