Channel Leo Season With These Tasty Summer Recipes To Feed A Crowd

Birthday Girl Trish is serving up these delicate and delcious dishes this Leo season

GOLDEN TOMATOES AND MELON WITH HEDERMAN’S HOT SMOKED SALMON AND NASTURTIUMS

Light, with delicate, summery flavours, this pretty salad makes a perfect summer dinner party starter.

For 4
10 minutes preparation and assembly

Ingredients
3 or 4 medium yellow tomatoes, washed, finely sliced
1 medium Galia melon, flesh cut into fan shapes
200g Hederman’s hot smoked salmon, broken up into loose flakes
Pepper, olive oil and nasturtium leaves and flowers to garnish

Method
Arrange the tomatoes and melon on one or individual dishes.
Scatter the salmon over them.
Garnish with the nasturtiums and finish with a little pepper and
light drizzle of olive oil. 

CHICKEN WITH HONEY AND TURMERIC

A super-quick and tasty weekday way of getting more healthy turmeric, and its beautiful golden hue, into your life.

For 6-8
10 minutes preparation
15 minutes cooking

Ingredients
8 skin-on chicken breasts
2 tbsp honey
3 garlic cloves, finely chopped
1 tbsp oyster sauce or soy sauce
2 tbsp oil
1 tbsp turmeric powder
1 pinch of cayenne pepper
Salt and pepper

Method
Combine the garlic, honey, soy sauce, turmeric, cayenne pepper,
pepper and salt in a bowl and generously coat the chicken pieces.
Leave to marinate for ten minutes.
Heat a frying pan over medium heat and add the oil.
Add the chicken to the pan and cook on both sides, until golden
brown, crispy and shiny. Arrange on plates and serve immediately
with a salad, steamed rice and more sauce on the side.
