Chocolate Almond Cake
A handy little gluten and lactose free chocolate cake for those around you with food intolerances …
10 minutes preparation
30 minutes cooking
150g good dark chocolate
60ml olive oil
125g ground almonds
1 tablespoon orange zest
2 tablespoons toasted flaked almonds
Icing sugar and/or cocoa powder
Pre-heat the oven to 180°c. Grease a 22cm sandwich tin.
Melt the chocolate gently over a Bain Marie.
Add the olive oil and orange zest and mix well.
Best the eggs and sugar until they become pale and double in volume. Then add the ground almonds.
Fold in the chocolate and pour the batter into the cake tin. Bake for 25 to 30 minutes. (Test with a skewer in the centre of the cake.)
Leave to cool slightly before turning out onto a wire rack to cool completely. Dust with icing sugar or cocoa powder and sprinkle with the toasted almonds before serving.
