WILD, FRESH, FORAGED INGREDIENTS

Glendalough Distillery makes some of the most unique, luxury gins in Ireland that have won international awards and praise around the world, but what makes them so special? Glendalough Irish Gin is crafted with fresh, wild botanicals hand foraged by Ireland’s only full-time distillery Forager, Geraldine Kavanagh in the valleys and mountains of Wicklow. Treading lightly and never taking too much from one place, Geraldine forages all year round to capture the purest expression of Glendalough. “The inspiration for the flavour of our gin comes from the scents, sights and tastes of Glendalough and it’s my job to put that essence of place into the bottle,” she tells us. “The ingredients that we use grow in the wild and we take a lot of care to ensure that we don’t adversely affect the areas we forage from.”

DEPTH OF FLAVOUR

Geraldine’s daily harvest is then passed to Head Distiller, Ciarán “Rowdy” Rooney within hours of foraging, who uses small-batch slow-distillation to tease out the delicate flavours of ingredients such as wood sorrel, pine and elderflower. The freshness of the botanicals is a unique point of difference for Glendalough Irish Gin.

Glendalough Wild Botanical Irish Gin serves the taste of ‘a year in every bottle’, with four seasons of foraging in Wicklow encapsulated in every bottle, while Glendalough Wild Rose Irish Gin has an equally unique story. This exceptional gin was created by Rowdy as a tribute to his late mother and is still crafted today using rose petals from her garden which gives it a beautiful, floral flavour.
