“If you’ve never had crispy airfried gnocchi, prepare to be pleasantly surprised. These pillowy bites turn golden, crispy and ridiculously moreish in the airfryer – almost like the best kind of crispy potato but quicker and way more fun! Add spicy, smoky Nduja salami paste and a shower of grated Parmesan, and you’ve got a dish that’s part snack, part comfort food – and totally delicious.”

Serves 2

Ingredients

500g fresh gnocchi (no need to preboil)
Spray oil
1 tsp garlic granules
Salt and pepper to taste
2 tbsp Nduja paste (a little goes a long way)
30g Parmesan, grated

Method 

1. Add the gnocchi to the airfryer basket and spray with oil. Then shake over the garlic granules and salt and pepper. Airfry at 200°C for 11-12 minutes, shaking halfway through, until golden and crispy.

2. Remove the cooked gnocchi from the basket and add in the Nduja paste to melt and warm through. Airfry for 4-5 minutes at 180°C, then toss in the crispy gnocchi. Shake the basket to coat the gnocchi with the Nduja.

3. Serve the crispy gnocchi on a plate and add grated Parmesan. Or make them more of a meal by serving on top of a crisp salad with chicken or prosciutto and a drizzle of Caesar dressing.
