How to pick a good cantaloupe melon: feel all around and press your thumb into the blossom end. The perfect cantaloupe should be firm with a little bit of give. If it’s hard like a watermelon, it’s not quite ripe. @kittycoles
Serves 4
Ingredients
1 small cantaloupe melon, rind removed, deseeded and cut into 2cm chunks
1 cucumber, cut into 2cm chunks
Juice of 1/2 lemon
2 tbsps of your best extra virgin olive oil
Salt and pepper
A chunk of parmesan
Method
1. Add the melon, cucumber, lemon juice, olive oil, salt and pepper to a bowl and give it all a good mix.
2. Tip the mix onto a serving platter then with a vegetable peeler, peel off bits of parmesan over the platter. Use as much or as little as you want here, I like a lot!
3. Serve immediately.
