Minuty returns to WILDE at The Westbury as the exclusive rosé partner this summer, bringing the taste of Provence to one of Dublin’s most iconic dining destinations. Running until September, guests can enjoy a curated selection of Château Minuty rosés – each perfectly paired with seasonal seafood specials designed to complement the delicate flavours of the wines.

This curated offering is guided by WILDE’s Head Sommelier Eric Arens, featuring a flight of three exceptional Minuty rosés for €36: Minuty Prestige 2024, Château Minuty Rosé et Or 2023, and Château Minuty 281 2023 – each served in a 75ml pour. Designed to showcase the signature freshness and finesse of the iconic winery, the experience is ideal for both devoted rosé enthusiasts and those discovering Minuty for the first time.

The Summer on the Terrace menu features a variety of seafood options, from the Wilde Seafood Platter with dill cured salmon, Carlingford Lough rock oysters, seared tuna sashimi, West Cork mussels, brown crab claws and prawns to lighter bites such as the Wilde Dublin Bay prawn cocktail or John Stone grass-fed Irish beef fillet carpaccio with rocket, parmesan, aged balsamic and anchovy aioli. For the ultimate indulgence, Caviar Beluga Huso-Huso is also available.

Minuty Prestige 2024 (€15 per glass and €60 per bottle) continues the legacy established over 25 years ago when Jean-Etienne and François Matton set out to create a signature rosé that captured the essence of Provence. This vintage reveals expressive floral notes followed by aromas of apricot and yellow peach, with a palate defined by finesse, subtle citrus, and a delicate saline finish.
Château Minuty Rosé et Or 2023 (€23 per glass, €89 per bottle) is an estate wine from 2009 that blends the winery’s three main terroirs: Gassin, the site of the Château, with its beautiful crystalline schist; Vidauban, the historic site, with its deep red clay soils; and Ramatuelle, on the sands with a view of the sea, for lightness. The resulting 100 per cent free-run juice selected by Jean-Etienne and François, who are in charge of pressing, involves no malolactic fermentation, as with all Minuty rosés.
Château Minuty 281 2023 (€44.50 per glass, €175 per bottle) is the latest Minuty rosé, celebrating its tenth anniversary this year. The distinctive blue on the bottle represents a celebration of the nearby Mediterranean Sea, which influences the flavour. 281 is also inspired by the vision of Jean-Etienne and François’ father Etienne who began cloning the winery’s exclusive Grenache in the 1970s, which now forms the 281 vintage’s best plots.
