From Dublin to Kinsale, Adare to New Quay, this is where Wishbone Kitchen ate, drank, and stayed in Ireland …
Meredith Hayden (aka Wishbone Kitchen) certainly has the world at her feet with the release of her first (NYT bestselling) cookbook published earlier this year, as well as being featured on Time 100 Creators List 2025 – her Instagram page, @wishbonekitchen, has over one million followers, with her TikTok at over two million. The influencer recently travelled to Ireland with her extended family, and had what looks like an idyllic stay, helped by the good weather.
Meredith’s Irish road trip appeared as sunny and sparkly as Meredith herself, so if you fancy following in her breezy “Hamptons visits Ireland” steps, here’s where to spend this sun-drenched weekend. From Dublin to Kinsale, Adare to New Quay, this is where Meredith Hayden ate, drank, and stayed in Ireland …

Adare Manor, Co Limerick
Adare Manor is the stuff of dreams, so it’s no surprise that Meredith chose it as her base for a luxury short break, Irish style. During her visit, she made the most of the five-star hotel’s food offerings for breakfast and lunch (even Meredith knows the club sandwich is a must) – and explored falconry. Did she dine in The Oak Room? Who knows, but if it were me …

Linnane’s Lobster Bar, New Quay, Co Clare
Fish, shellfish, and more seafood, that’s what you can expect on a visit to the aptly named Linnane’s Lobster Bar in New Quay, Co Clare. The picture-perfect, blue-trimmed cottage is home to a seafood emporium with the most stunning views over the Atlantic from the terrace at the rear. Meredith’s dish of choice was a traditional fish and chips, bathed in White Hag beer batter, served with proper chips and mushy peas. And it looks like the group enjoyed the famous seafood platter and the Flaggy Shore dainties too – a must-eat at Linnane’s, in my opinion. From all appearances, there was also a sticky toffee pudding with ice cream and candied walnuts, as well as pints of Guinness, naturally.

The Mill and Barn, Novohal, Co Cork
After Adare Manor, Meredith and her family unpacked for a few days in The Mill and Barn in Novohal, Co Cork. The property is located a 20-minute drive from Kinsale and can accommodate parties of up to 20, spread across two buildings. The mill is an elegantly restored, stone-clad dreamboat with a stunning kitchen and terrace where Meredith cooked up a storm, while the barn is a modern, aluminium-clad annexe that sleeps six.
The English Market, Cork City
No chef or food lover worth their salt would visit Cork without paying homage to the shopping experience that is The English Market. Meredith, it seems, was wisely advised and popped in to buy all the fixings for an epic lamb feast, cooked at The Mill and Barn, which she finished with fresh herbs and salad leaves picked from the garden.

The Bulman, Kinsale, Co Cork
During their time in Cork, Meredith et al lunched at The Bulman, Kinsale, a waterfront pub dishing out oysters, mussels, chowder and crab with aplomb. The vibrant orange frontage looks out over the harbour and across to Charles Fort, just steps from the Atlantic, making it the perfect place to park yourself on a sunny afternoon. The downstairs bar is perfect for lunch and light bites, while the upstairs restaurant is available to book in advance.

Dublin
During her short visit to the capital, there was music and pints in The Temple Bar and a ubiquitous visit to The Guinness Storehouse for more pints, along with a packet of Keoghs Guinness crips.
