ROOMS There are 72, with six suites. All are colourful, comfortable and contemporary in line with Dylan DNA, refurbished by Caroline Campbell from design firm Tonik, and Grainne Weber of Grainne Weber Design. Details include furniture by Gem Joinery, Co Longford, ceramics and art by Mary O’Connor, Emma O’Hara and Alice Fitzgerald, among others, curated by Catherine O’Riordan of SO Fine Art Editions Gallery. Seriously good bathrooms with underfloor heating and Roads Perfumes products, Frette sheets and interesting bedside books add a layer of luxury. Pet-friendly rooms are available.
DINING Breakfast and dinner is served in the pretty Eddison Restaurant, named after Miss Edith Eddison, a matron during the 1916 Easter Rising. There’s an Italian twist to the menu (focaccia and tuna tartare are signatures) reflected in the impressive wines served. For a chic night out, the hotel bar, with its striking Cian McLoughlin portrait, is intimate and alluring, as is the Ruby Room, which serves a small plates menu and interesting cocktails (try the 1930s Cosmopolitan). The Pommery Terrace and the inner Nurserie terrace are especially popular in summer months and during rugby season for daytime drinks and post-match debriefs.
