GARLIC BUTTER AND PARMESAN CHICKEN SKEWERS
These super tasty skewers are so handy to throw together and make a great midweek meal. The garlic butter and Parmesan complement each other so well together with the peppery kick from the lemon pepper.
Serves 4
Ingredients
4 chicken fillets, cubed
1–2 tbsp olive oil
3 tbsp lemon pepper
8 wooden skewers
4 tbsp butter, melted
4 garlic cloves, minced
40g Parmesan, grated
To serve:
Fresh parsley, chopped
Method
1 In a bowl, mix the cubed chicken, olive oil and lemon pepper to coat evenly.
2 Thread the seasoned chicken onto the presoaked skewers.
3 Place the skewers into the airfryer basket and cook at 190°C for 11–12 minutes, turning halfway through, until golden crisp.
4 Mix the melted butter, garlic and Parmesan in a bowl and brush over each skewer in the airfryer.
5 Pop the skewers back in and cook for an additional 4–5 minutes until the Parmesan browns.
6 Garnish with chopped fresh parsley and serve with a fresh, crisp salad.
