A New Chapter

An exclusive event, hosted by The Gloss and Gaggenau at Chapter One, treated readers to a special dinner with Ross Lewis and Mickael Viljanen …

Readers and VIP guests of Gaggenau joined us for a rare opportunity to dine in Chapter One with two of Ireland’s most influential chefs on the Irish contemporary food scene and to enjoy a specially designed four-course dinner with wines.

Chapter One’s newly designed interior was a beautiful setting for this elegant evening which began with a champagne and canapés reception, before guests sat down to partake of the exquisite starter of Steamed Mossfield Gouda Soufflé. This was followed by the second course of Cod with Maitake mushrooms and Bonito Butter beautifully accompanied by a Viognier, IGP Pays d’Oc Baron d’Oppia, 2018. The main course, Black Chicken from Challans, Onion, Pistachio, Kohlrabi, Liver Ganache, Sauce Poulette with Mosel Riesling was served with a delicious red, Minervois Château Blomac, 2016. For dessert, guests enjoyed an Azelia Chocolate, White Miso, Coffee mousse with Salted Milk Sorbet and accompanied by a Lustau Cream Sherry “East India Solera”.

With Michelin-star chef-patron Mickael Viljanen leading the team in the kitchen and Michelin-star Chapter One founder Ross Lewis meeting guests, we feel their newly formed partnership at Chapter One is set for multi-stardom. As both chefs are newly christened ambassadors for Gaggenau, it was also a timely celebration of this new relationship.

Longstanding fans of Gaggenau (Ross installed Gaggenau oven and hob and teppanaki in his home more than 20 years ago), the duo commissioned a stunning marble centrepiece for the main dining room as part of the interior redesign of the restaurant. The piece de resistance? A sleekly elegant Gaggenau induction hob encased in the marble top which enables dishes to be finished in situ. This culinary theatre also offers an opportunity for diners to see firsthand how the experts do it…
