There comes a point in life when the appeal of a table for two fades and the counter suddenly looks far more enticing. Convivial and ever-so-slightly conspiratorial, it’s where the real action happens. Plates pass under your nose, wine is poured within splashing distance, and you’re close enough to overhear (and perhaps envy) the best orders. Solo, duo or for “just one more glass”, the
counter is often the best seat in the house.

La Gordita, Dublin 2
For elevated tapas at a polished wood bar counter, the motto here is less “let’s share” and more “order your own”. The counter gleams, the jamón glistens and the croquetas are a mouthful of joy that make you wonder (momentarily) why you ever settled for a snack with your drink. The staff is supremely knowledgeable and even dining at the counter feels like a special occasion. Tiny but mighty, find stylish Italian small bites here, including Venetian-style cicchetti from a slender wooden counter that rewards spontaneity. Pop in for a glass of Calabrian wine and a plate of burrata, and you’ll almost certainly stay for pane in Cassetta with thyme whipped butter, Calabrian anchovies, roasted peppers and a Negroni Sbagliato. Replace your memories of polystyrene trays and sachets of vinegar with this high-brow fish and chips with wine offering served at a sleek little bar counter. The battered fish is flaky and crisp, and the starters are reason enough to visit, from crab on toast to scallops and calamari. The wine list is sharp, natural and curated with flair, elevating the whole experience to something close to ritual. Some counters are for small plates; this one is for classics that will satisfy any appetite. Hearty pie comes with a crust sturdy enough to survive just about anything, while remaining light and buttery. Plus, there are bitterballen served with hot mustard which, in my humble opinion, are probably the best bar bites in the world. Order a martini, survey all the goings-on from the brass counter and bask in the sense that you’ve stepped into a stylish neighbourhood pub. @spitalfields_dublin

Little Forest, Blackrock
There are pizza counters, and then there’s antipasti and primo pizza at this hidden gem where the pizzaiolo stretches dough with a flourish before sending it to the flames, while you sip a spritz and snack on arancini and olives. The pizzas arrive blistered, bubbling and barely in need of cutlery, and the antipasti is equally as thrilling. The best seat is always at the counter; the only place you can properly watch the magic happen. Skipping the tiramisu would be a grave mistake, but we don’t have to tell you that! @littleforestdub
