I advise you to book ahead for Cellar & Savour, an exclusive winemakers dinner in the Lady Helen Restaurant in October. This event is a collaboration between executive chef John Kelly and Anne Gremillet, whose terroir-driven cuvées will complement the eight-course tasting menu. Ashford Castle offers an array of wine tasting experiences in The Castle’s wine cellars, originally used as the servants’ entrance and coal bunker dating back to the 17th century. I had one of these tasting experiences with head sommelier Paul Fogarty which was as educational as it was enjoyable. Packages start from €130 for a White Wines of Europe tasting, while red wine tastings start from €140 for the Bordeaux Varietals option. Also recommended is the Castle’s Blas Experience which includes wine tasting in the cellars followed by a private dining experience in Stanleys restaurant, with dishes made in front of guests by executive head chef Liam Finnegan and dessert made by Paula Stakelum. @ashfordcastle
