Two melon salad with mint, hazelnut, feta & sumac
When summer comes, I cannot get enough of both sweet cantaloupe and thirst-quenching watermelons. Here, I’ve combined them with a little creamy, acidic kick from the feta, and a crunchy, aromatic garnish. Pretty, inviting and ready in three minutes.
For 2; 5 minutes preparation
1/2 medium sized cantaloupe
1/4 watermelon (same size as the cantaloupe)
1 tablespoon hazelnuts, crushed
1 tablespoon mint leaves chopped
1 tablespoon good olive oil
1 teaspoon sumac
Slice the melon flesh into thin fan shapes.
Arrange on the plate, crumble over the feta & sprinkle with the sumac, mint & crushed hazelnuts.
