Trish Deseine’s Spelt Buttermilk Pancakes


Spelt Buttermilk Pancakes with caramelised apples and apple jelly

If you’re saving pancake day for this weekend, try these spelt buttermilk pancakes. I love the nutty flavour of spelt combined with apple. Serve these with crème fraiche or Greek yoghurt.

For 4
20 minutes preparation

2 or 3 cooking apples, peeled, cored, cut into quarters
50g butter
1 tablespoon light muscovado sugar
1 tablespoon apple jelly

100g spelt flour
1 ½ teaspoons baking powder
1 tablespoon light muscovado sugar
A pinch of salt
200ml buttermilk
1 egg, beaten
20g butter

Make the pancake batter by putting all the ingredients in a mixer and beating until the batter is smooth. Leave to stand as you prepare the apples.

Melt the butter in a large frying pan, start frying the apples then sprinkle with the sugar and cook gently until they are sticky and golden. Mix through the jelly. Wipe the pan and keep them warm as you make the pancakes.

Melt the butter in the pan until it is bubbling. Spoon a ladle of batter into the pan and swirl to cover the base in a thin layer. 

Flip over when golden, cook the other side and keep going until the batter is finished. Add butter to the pan as you go along. Serve warm with the apples.
