Food editor TRISH DESEINE shares a recipe for tomatoes on toast …
Tomatoes on toast with toasted sesame, seaweed and gomasio
Use some of the seaweed salts, now readily available, for the gomasio. Or mix through some Nori or Kelp. A good little condiment to keep in the kitchen or on the table.
10 minutes preparation
2 large or 3 medium tomatoes
1 teaspoon toasted sesame oil
1 tablespoon olive oil
2 slices of good bread
For the Gomasio
150g white sesame seeds
10g fleur de sel/sea salt flakes
1 tablespoon dried seaweed
Toast the sesame seeds and leave to cool. Add the salt and grind to a soft powder in a mini blender or with a pestle and mortar. Mix through the seaweed flakes.
Chop the tomatoes into smallish chunks. Mix in the oils and leave to rest.
Toast the bread, top with the tomato and sprinkle the gomasio over the lot.
