Pretty, refreshing and with less of a kick than simple white wine, this is a lovely summer drink to serve in big glass pitchers packed with ice and chunks of fruit. Keep a bottle of the thyme syrup in the fridge for cocktails and kirs.
For around 250ml
3 minutes preparation
10 minutes cooking time
30 minutes cooling
30g thyme leaves plus stalks for garnishing
Zest (removed in strips with a vegetable peeler) and juice of a lime
Ice cubes, chunks of apple and watermelon for garnish
Soda or sparkling water, white or rosé wine.
Bring the water to a boil, add the sugar, stir until dissolved. Add the thyme, the lime juice and zest and simmer together for 8 to 10 minutes.
Sieve the syrup, discard the zest and the thyme and leave to cool before pouring into a bottle and storing in the fridge before using.
