Classic tomato salad with two basils, coriander and sesame soja dressing
I can’t believe I haven’t yet killed my basil! On the contrary, both pots – green and purple – are doing just fine. We’re not in full tomato season yet, but already very much craving high summer dishes. Instead of reaching for the feta or the mozzarella, make the most of the small, mild new onions and change up the dressing on your classic tomato and onion salad. Mixing and matching sizes and colours will give it a show stopping edge.
Balsamic, soy and toasted sesame dressing
Use the best balsamic you can find. Mine is the 12 year old from The Real Olive Company in Cork’s English Market and worth every penny. So delicious, in fact, you could sup it from a spoon.
For 4
2 minutes preparation
4 tablespoons mild olive oil
1 tablespoon soy sauce
1 tablespoon toasted sesame oil
2 teaspoons balsamic vinegar
Whisk everything together and drizzle over the salad. Make up a double batch and keep it in a jam jar in the fridge.
