Sesame oil, tomato & avocado toast with gomasio
Make up a bowlful of gomasio and use it instead of normal salt during the week ahead. It’s good for you and adds a lovely flavour to your cooking, especially if you add toasted nori or other seaweed in the Japanese tradition.
For 2. 10 minutes preparation/1 hour cooling for the sesame seeds
2 slices good bread for toasting
2 teaspoons toasted sesame oil
1 clove garlic
1 ripe avocado
Squeeze of lemon or lime
3 or four tomatoes
4 tablespoons sesame seeds
1 teaspoon salt flakes
Fresh herbs – parsley, coriander, basil…
Toast the sesame seeds and leave to cool before blitzing with the salt into a fine powder. Add the seaweed if you’re using it.
Rub the bread with the garlic clove, sprinkle with the oil and toast under the grill until golden.
Mash the avocado and spread it onto the toast while it’s still warm with a squeeze of lemon. Chop the tomatoes roughly and mix through the herbs if you’re using them.
Top the bread and avocado with tomatoes and season with gomasio.
