A Summer Salad For When It’s Too Hot To Cook

Ireland’s ongoing HEATWAVE has us wanting to stay out of the kitchen, so food editor TRISH DESEINE shares her recipe for a simple SUMMER SALAD

 

Summer salad with peas, mint, strawberries anchovies & mozzarella with sweet miso & lemon vinaigrette. 

My friends, it’s too hot to cook: hell, it’s almost too hot to eat! So make your life deliciously simple by piling everything that says *summer* onto one plate and taking it straight outside. I had to force myself not to use tarragon in here, but you could, of course.

For 2; 10 minutes preparation 

20 or so small, ripe cherry tomatoes, cut in half

1/3 cucumber, half peeled, diced

5 or 6 large strawberries, hulled, sliced

1 scallion, finely chopped

100g peas, fresh or frozen, barely cooked in boiling water

2 or 3 tablespoons fresh mint, chopped

1 tablespoon basil chopped

1 or 2 balls of mozzarella torn into pieces

Anchovies to garnish (optional)

Summer flowers to garnish (optional)

For the vinaigrette 

1 tablespoon sweet miso

1 tablespoon lemon juice

2 tablespoons olive oil

Toss all the ingredients of the salad together, season if you’re not using the anchovies, garnish and serve with the miso vinaigrette.
