Purslane with Ummera smoked chicken, blood orange, baby potatoes & beetroot

For 2 / 5 minutes prep

2 good handfuls of purslane (or lambs lettuce or baby spinach at a pinch) washed, spun and dried
About 1/2 a Ummera smoked chicken breast
6 thin slices cooked beetroot
1 blood orange, segments removed, juice collected and set aside
6 baby potatoes, steamed, cooled
Salt and pepper
Sprig of Parsley
Olive oil
Mustard

Make a vinaigrette with the orange juice, some olive oil and a touch of mild mustard. Season.

Toss the leaves in a little vinaigrette and arrange on two plates. Assemble the other ingredients, drizzle with remaining vinaigrette, garnish with parsley and serve.
