For the week that’s in it, a pancake-ish dessert for sharing. 

For 4 – 6 / 20 minutes preparation and cooking

4  eggs

1 tablespoon sugar

100g plain flour

150ml fresh milk

1 teaspoon good vanilla extract

30g butter

Icing sugar, maple syrup and berries to serve 

Preheat the oven to 220c and put the pan in to heat it up. 

Put the sugar and eggs together into a mixing bowl and beat until they have become foamy. Add the other ingredients except the butter and beat well to make a thinnish batter. 

As you would for Yorkshire pudding, take the hot pan (careful!) out of the oven and heat the butter. Once it is melted and slightly sizzling, pour in the batter and bake for 15/18 minutes, until the batter is golden and risen. 

Serve immediately, sprinkled with sugar or icing sugar. Add berries, ice cream or yoghurt and maple syrup.
